Carrot Cake with Raisins

Ingredients
- 2 cups medium finely grated carrots
- 1 cup of raisins (pre-soaked for 3 hours in the juice of one orange)
- 1 teaspoon Vanilla essence
- 4 eggs
- 1 and half cups of salad oil
- 1 teaspoon of finely grated lemon rind
- 1 and half cups of brown sugar
- 3 cups of floor
- 3 teaspoons of cinnamon powder
- 3 teaspoons baking soda
- 1 teaspoon baking powder
Method
Preheat the oven to 170 degrees centigrade
Using a mixer, mix the eggs and sugar thoroughly
Add the oil, and vanilla essence and keep mixing
Add the raisins and lemon rind and keep mixing
Add the sifted flour (It should be sifted together with cinnamon, baking soda, and baking powder) and keep mixing
Finally, add in the grated carrots and fold it in using a spatula or a wooden spoon
Pour into 2 greased and floured tins
Bake for 35 minutes or until well baked (test by inserting a dry knife - if it comes out dry then it is well done)
