Delicious Mbaazi Recipe (Pigeon peas)

 


Ingredients

  • 1 and half cups of soft boiled fresh mbaazi
  • 1 large onion
  • 2 medium tomatoes
  • 1/2 cup of coconut milk
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon of paprika
  • Salt to taste
  • Vegetable oil

Method

Fry the onions and once they get transluscent add the spices and salt to fry for a 2 minutes or so.
Add the chopped tomatoes and boiled mbaazi at the same time
Add a quarter cup of water and let it simmer to a boil
Add the coconut milk and cover to a boil then turn off.
If needed you can add a little bit more water so that it doesnt get too dry
