Marinated Oven Roasted Chicken

Ingredients


  • 1 whole chicken (1 kg), chopped into pieces
  • 1 tablespoon crushed garlic
  • 1 tablespoon crushed ginger
  • 1 teaspoon of black pepper
  • 1/2 teaspoon of white pepper
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon salt
  • Juice of one lemon, or 1 teaspoon vinegar
  • 1/4 cup of cooking oil

Method
  1. Preheat the oven
  2. Mix all ingredients except the chicken to make the marinade
  3. Marinate the chicken using the above mixture for 3 to 6 hours in the fridge 
  4. Place the chicken pieces on a lightly oiled oven tray
  5. Bake in the oven keep turning to brown both sides
  6. Once the moisture is dry, add a quarter cup of water onto the oven tray, cover with foil and return to the oven under low heat 
  7. In case it's ready too early (before you are ready to eat), add some more water if dry and continue under the foil until its dinner time to keep it hot
