Carrot Cake Recipe


One of the best Carrot Cake Recipes I have ever tried. Super moist and tasty.

Ingredients

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon powder
1 cup brown sugar
2 teaspoons vanilla essence/extract
3 eggs
1 cup oil
3 cups finely grated carrots

Method





  • Sift the flour with baking soda, baking powder, and cinnamon and set aside
  • Mix the sugar, eggs, oil and vanilla using a mixer
  • Add the flour and continue mixing for a few seconds - till thoroughly mixed
  • Stir in the grated carrots
  • Pour into 2 baking tins and bake for 35 minutes at 170 degrees centigrade.
  • Ensure it is well done before you remove it by inserting a toothpick. It should be dry.
